O Óleo de Alto Rendimento consiste numa mistura fina de óleo de fritar vegetal (entre outros, o óleo de girassol High Oleic refinado). Gozando de um ponto de ebulição elevado (acima dos 210ºC) e um baixo teor de ácidos gordos livres, a vida útil do Óleo de Alto Rendimento é muito mais longa que a dos óleos normais.
Escolha um óleo para fritar que melhorará o rendimento do seu restaurante em termos de custos e qualidade das refeições.
Durante o período de descanso não ter o termóstato a mais de 90º;
Secar os alimentos antes de introduzir na fritadeira;
Não misturar com outros tipos de óleos;
Não adicionar sal aos alimentos antes e durante a fritura;
Não sobrecarregar o cesto da fritadeira, manter uma porção de 6 partes de óleo para 1 de alimentos;
Utilizar um coador, ou uma escumadeira para eliminar os restos de comida que flutuam no óleo.
